Sauce (salsa) plays a very important role in the Mexican cuisine. Salsa (mix of chili, tomato and spices) can be traced back to the Aztecs, Maya and the Inca Indians. There are of course different kinds of Mexican sauces. Fresh sauces with lime and totopos are served from both street kitchens to fine restaurants. There are many different varieties - green, red, pico de gallo, taquera, el yucateco, habanero, car, carribean, etc. Here are some of the most popular:

Salsa Negra (black salsa / sauce) - made on dry chili, oil and garlic.
Salsa taquera (tacosalsa / sauce) - made on tomato paste
Guacamole - made of avocado, is usually used more like dipping than sauce
