Chiles Poblanos, 940g, Lol-Tun
It is a different flavor of chili, which gives us some sweet notes and less acid, than we find in stronger ones, increasing this fine characteristic among more boiling they receive and recall their center (seeds and veins). Its preparation normally carries a touch of gastronomic folklore, since they must be placed to direct fire to toast the skin and later keep them under a damp cloth to separate the skin easily. A curious fact is that it is a "chameleon" chili, since the same one, but dehydrated, receives the name Chile Ancho or Mulato depending on the species and in other regions of the country is also known as Chile Joto or Chile Corazón.
