Achiote is used in three different ways; The seeds, a paste made on pure achiote, or in blocks, seasoned with spices and / or vinegar. Achiote is, for example, the main ingredient of Conchinita Pibil, which is perhaps the most popular and well-known export to the rest of the country. Achiote is often used to get the red color in the right Tacos al Pastor. The seeds can be used to give a ruby red color, while its permeating taste (and color) serves as a flavor for everything from meat to rice.
Ingredients: Water, corn flour, annatto seed, salt, garlic, spices (cinnamon, black pepper, cumin, cloves and oregano)
